Pungently spicy in the best possible way, the 2021 Soave Ronca Monte Calvarina opens with a bouquet of wildflowers, crushed rocks and lime zest, giving way to ginger-tinged green apple. This plays with the palate, vividly sweet yet packed with zesty acidity and mineral tones that create a wildly contrasting style. It finishes with a tropical flair, mixing tart citrus with sour melon, and lingers on for what seems to be almost a minute.
